AVI-Mux GUI is a tool that can create AVI-files with multiple audio streams.

Supported input filetypes include AVI, MKV, WAV, MPA/MP3, AC3, DTS, AAC, OGG/Vorbis, SRT and SSA. Supported output formats include AVI, MKV, raw (MPx, AC3, DTS...), ATDS-AAC and OGG/Vorbis.

AVI-Mux GUI v1.17.8

I luv this software. It's very easy to use to demux/mux AVI and many MKV files. <br/>Here's a screenshot of how to mux a dual audio AVI into a new AVI container with just one of the audio streams. <br/><a rel="nofollow" href="http://i41.tinypic.com/2n04vlz.jpg" target="_blank">http://i41.tinypic.com/2n04vlz.jpg</a> <br/>I'd give it a '5. Excellent!' except currently if you are using Vista you need to run it in compatibility mode.
